Preserved Lemon Celery Salad with Parmesan
My current hyper-fixation meal
I was raised at a dinner table that always consisted of four things:
Protein (usually meat)
Starch (usually potatoes or rice)
A cooked vegetable
A salad
Without fail, my mom would have two separate vegetable dished on the dinner table. Perhaps that is why I turned into such a vegetable lover. It was easy for me to find at least one dish that I would enjoy. Don’t get me wrong, I love a big salad. A Seinfeld level big salad that can only be described as massive. And I used to have one on the dinner table every day - until I get pregnant with Ari, and for some reason, it just didn’t hit the same.
I started to crave lettuce-free salads that I could make in advance, or even the day before, that would still be good as leftovers, using cabbage, kale, and chopped vegetables for hearty salads - but one vegetable was often left out… celery!
Celery is underrated, often relegated to crudite platters, it has so much to offer. Its subtle sweetness, bitterness and crunch make it the perfect base for a zesty salad. Better yet, no wilting here!
